Carrot cake

Ingredients:
6 egg yolks
200 g sugar and the rind of 1 lemon
beat together until fluffy
300 g ground nuts
300 g grated carrots
150 g flour and 1 sachet of baking powder (both sieved); mix well

Method:
Beat the 6 egg whites with 100 g sugar until stiff and then fold in to remaining ingredients by hand. Bake for one hour at 150 ºC top heat and 180 ºC bottom heat.
